炸女婿蛋,一個非常奇妙的名字。原來因為泰國是母系社會,所以如果說女兒帶了男友回家,丈母娘看了滿意的話,就會做這道菜給未來的準女婿吃,也希望未來的女婿可以好好照顧自己的女兒,多子多孫的意思。
Kai Look Kuey is a pretty
interesting name, Look Kuey in Thai is son-in-law. Traditionally Thailand is matriarchal society,
therefore, if the daughter takes her boyfriend back home and the mother likes
and accepts this guy to become her son-in-law, then she will make Kai Look Kuey
for him, in the hope that he will take care of her daughter in the future and
having many descendants.

做法:
1. 準備4顆去殼的水煮蛋雞蛋。
2. 將羅望子汁、棕櫚糖、魚露放置鍋中煮沸,直至棕櫚糖融化及醬汁呈現濃稠狀,放置一旁備用。
3. 乾辣椒以熱油快速炸過。紅蔥頭切絲,慢炸至酥脆狀瀝油後,放置一旁備用。
4. 以熱油直接炸去殼的水煮蛋,直至水煮蛋表面呈酥脆狀後,即可起鍋放涼後對切。
5. 擺盤後,撒上酥炸紅蔥頭、乾辣椒及香菜葉,並且淋上羅望子醬即可上桌。
Process:
1. Prepare 4 hard boiled eggs and unshelled.
2. Using saucepan to cook tamarind juice, palm sugar
and fish sauce, until the palm sugar is melt and getting thick consistency.
3. Quickly deep-fried dried chilies. Slice shallots and slowly deep-fried it until
it gets crispy texture and set it aside.
4. Using hot oil to deep-fry hard boiled eggs to get
the crispy surface, and then take them out from the pan, cool and cut it into
half.
5. Plating the egg, garnish with deep-fried shallots,
chilies and coriander leaves, finishing by applying tamarind sauce on top. Enjoy!
